Perplexing Problem

I use an account, call it Joe Smith<joe@xyz.com), to send an email.
Before I click Send, I look at the From to be sure it says Joe Smith
<joe@xyz.com>. I then click send.

I go to the recipient's account and see there is an email from Joe Smith
<joe@gmail.com> !!!

In the source of the email, I see

From: Joe Smith <joe@gmail.com>
X-Google-Original-From: Joe Smith <joe@xyz.com>

How did google get involved??? Why did they change the sender's address?

Are you using the Google SMTP server?
