Start with reading the docs focussed on usage:
Afterwards prefer the official docs about how to install over

You don't need to have to unless you want to customize Bugzilla, which
you should avoid even with good programming language. Even though
Bugzilla provides official ways for customizations, those always mean
you need to maintain them on your own, need to adopt them to newer
versions of Bugzilla, making updates and upgrades more difficult etc.
Try to only use whats provided out of the box.

That sounds unnecessary overblown to me: 1. there's almost never "the
right way" for anything, just things that might make sense for you as
well. Which is most likely simply following the official user guide.
2. mastering every aspect of a complex software like Bugzilla ist most
likely as well never necessary. Install it, use from it what you need
and don't care about anything else. Take a more in depth look at
things when you actually need them or run into problems, everything
else is a waste of your time. Most software simply develops too
quickly to always master it in every aspect.
